  • 2 ½ cups rotini pasta (cooked al dente)
  • 12 oz Evaporated Milk
  • 8 oz American cheese cubed
  • 4 oz Sharp cheddar cheese shredded
  • 4 oz Diced Green Chili Peppers drained
  • 2 Teaspoon Chili Powder
  • 2 tomatoes seeded and chopped
  • 5 green onions sliced, for garnish

Instructions

  • Cook rotini pasta according to package directions until al dente. Drain thoroughly and set aside. Ensure it’s not overcooked, as it will continue to cook in the slow cooker.
  • In your slow cooker, combine the cooked rotini, evaporated milk, cubed American cheese, shredded sharp cheddar cheese, drained diced green chili peppers, and chili powder. Stir all ingredients together until well combined and the pasta is mostly submerged in the liquid and cheese.
  • Cover and cook on HIGH for 2 hours. Halfway through, give it a good stir to prevent sticking and ensure even cooking and melting of the cheese. Avoid lifting the lid too often to maintain consistent heat.
  • After 2 hours, stir in the seeded and chopped tomatoes and sliced green onions (reserving some green onions for garnish, if desired).
